I think we’re going to have a barbecue this evening. It’s been raining quite a bit all week, but there’s been no rain in the last two hours so we might make a break for it and get the BBQ going.
I already have chicken marinating and we picked up some corn on the cob ($2 for 5) at a local grocery store earlier in the week. Yum. A nice simple dinner – yet tasty! I’ll probably cut up some red pepper to grill along with the chicken and make a small salad too. All that’s missing is a dessert.
Now if that call that I’m waiting for from the insurancespecialists would hurry up and happen I can get cooking.
What are you having for dinner tonight? Do you find that you are barbecuing more often now that the nice weather is here?

Next time you cook BBQ you MUST try this AUTHENTIC BBQ SAUCE. The recipe is from my old city, culiacan mexico
Hope you like it!!
1 c. white vinegar
2 tbsp. sugar
2 tbsp. salt
2 tbsp. black pepper
1 tbsp. cayenne pepper
1/4 stick butter
1 tsp. lemon juice
1 c. catsup
1/2 tsp. paprika
Mix all ingredients in pan until butter melts. Let sauce cool, then pour over meat and cook for appropriate meat (great on chicken or pork), keep basting to keep meat moist.
When making 1/2 of recipe, include full measure of vinegar, catsup and butter. This sauce makes enough for 6 to 8 healthy helpings.
